Nigerian culinary expert and restaurateur Hilda Baci has recounted a pivotal incident during her successful attempt to secure a Guinness World Record for preparing the largest pot of jollof rice, following the unforeseen collapse of the custom-designed giant pot.

In a video disseminated on X on Tuesday by HipTV, Chef Hilda Baci acknowledged that the unsettling moment nearly overwhelmed her during the discussion. “When we had the mishap with the pot, my first few seconds, my heart was in my hands. I was very scared, very worried,” she expressed.

Baci highlighted that her primary concern at that moment was to ensure the food was served rather than focusing solely on the record itself.

“For me, the record was not the most important thing. It was important that people got to taste and enjoy the food we had spent hours making,” she stated, adding that the pot’s failure unexpectedly facilitated the process.

““I would say it was a good thing that the pot caved because it made food distribution a lot easier… it was a blessing in disguise.”

The dramatic encounter transpired on September 12 at the World Jollof Festival in Lagos, where Baci and her team orchestrated the preparation of nearly 8,780 kilograms (approximately 19,356 pounds) of jollof rice in a pot measuring six meters in both width and height, boasting a capacity of about 23,000 liters.

As a crane hoisted the pot for weighing, one side collapsed and the supporting legs buckled, although the food itself remained unscathed.

Baci and her team presented video and photographic documentation of the weighing procedure to Guinness World Records, which subsequently verified her as the official record-holder for the largest pot of jollof rice prepared at one time.

Reflecting on the intense moment, she described how the team had to respond swiftly, ensuring the process was transparent and meticulously documented before proceeding.

“So I reached out to our adjudicator, and I let him know that the pot caved… And he’s like, let’s just proceed…we had to look for different cameras to see if we had a recording, a clear recording of that, because for me, transparency is very, very important.

“So once we were able to establish that we had a clear recording of that, it was just straight to the next thing, like to distribute the food.”

Reflecting on her achievement as a two-time Guinness World Record holder, she concluded, “It’s just a testament that God is good and I’m a child of grace. When I tell you grace is here and you doubt me, look at my track record. Trust the Lord.”

This latest achievement adds to Baci’s earlier record for the longest cooking marathon by an individual, attained in May 2023 after she cooked for 93 hours and 11 minutes.
